Planted in 1996, their 15,000 vines include Shiraz, Cabernet, Semillon and Riesling. All of their vines are drip irrigated and grown on open trellising, exposing the fruit to breezes and sunlight, both important to build the intensity of flavour in the fruit. The vineyard is also blessed with warm sunny days during the ripening season and cool nights which build acid and assist the wines to age gracefully.

Now, all year round , you can enjoy an Alfresco lunch at Blacklea, in a new enclosed facility, overlooking Lake Shiraz.

In the winery's cask hall, beneath the cobwebs barrels full of wine are maturing in a restful slumber which is almost tangible. By contrast, you are invited to investigate where technology meets tradition in the winery's tank room where the grape starts the transition into wine.

Wine tastings are conducted in the cask hall, which is dotted with barriques, puncheons, antique choir stalls, and flanked by twenty old German oak casks (circa 1850) used for storing wines. These came from Penfolds Cellars, when located in the basement of Sydney’s famous Queen Victoria Building.

Rosby Wines are the epitome of low-impact viticulture and truly boutique wine production. Borne from 15 acres of 20-year-old cabernet sauvignon and shiraz grapes — planted, pruned and picked by hand — the vineyard is carefully managed to produce high-quality, low-yield crops. Varietals are pressed in small parcels at a local winery, and lovingly tended by both vigneron and winemaker to produce a fine, fruit-driven wine designed to age well.

The 2009 vintage saw the addition of a deliciously sticky liqueur port and in 2011 a refreshing rosé added to the Rosby cabernet and shiraz...

There are 24 separate varietal blocks within the 40 hectares of the Huntington Estate vineyard. Most soils are predominantly sandy loam sitting above well drained, permeable clay, although quality and type varies dramatically from block to block.

Most vines are now almost 50 years of age and hitting their prime in terms of quality. The clay sub-layer holds the key to the vines' performance. Good winter and spring rain usually fill up this layer. The vine roots are well embedded in the clay and during the dry summer and autumn period, they draw water from this zone.
